- Debone the thigh with drumstick
- Season them to taste and set aside. Note: scrape the equivalent of 1 tablespoon of ginger zest, it will bring a very special touch to your chicken.
- Cut the carrot and pepperoni into strips.
- Wrap the pepperoni and carrot strips with the already seasoned chicken.
- To close them so they don't open, use a toothpick to stuff the chicken.
- Take it to a greased shape and cover with aluminum foil, let it bake for 30 minutes at 200°
- Then remove the foil and leave for another 20 minutes to brown.
- Serve immediately with a watercress salad as an accompaniment.
