Roll out the puff pastry-+50cms, fill the entire pastry with Parma ham blades, then cover with Shiitake crushed in the mix. Finally, place the filet mignon and roll it up so that it wraps inside, pass a yolk on top so it can brown and bake in the oven for about 50 minutes and then just serve.
