  • Cooked Butter Beans1/2 cup
  • Chopped Bacon2 tablespoon
  • Chopped pepperoni1/3 cup
  • Chopped Onion2 tablespoon
  • Chopped Garlic1 teaspoon
  • Egg2 unit(s)
  • Fine cassava flour1/3 cup
  • Chopped Chives1 tablespoon
  • Ground black pepper to taste
  • Sea Salt to taste
  • Lard1 dessert spoon
  1. In a high non-stick skillet, fry the bacon and sausage until it releases the fat well. Book and use the fat released to prepare the egg.
  2. Add the eggs to the fat and make scrambled eggs, but do not mix too much so that they become more chunky. Reserve.
  3. Add the lard to the heated skillet and fry the onion and garlic.
  4. Add the beans and sauté, season with salt and pepper.
  5. Return the sausage, bacon and egg reserved to the skillet and mix.
  6. Add the flour and stir to incorporate. Adjust the salt.
  7. Mix for another 2 minutes and finish with the chives. Serve immediately.
