Tenderloin Stuffed with Apple

  • Pork loin1.5 kg
  • Apple2 unit(s)
  • Chopped Onion1 unit(s)
  • Garlic cloves3 unit(s)
  • Butter3 tablespoon
  • Brown Sugar2 tablespoon
  • Orange Juice100 ml
  • Breadcrumbs100 g
  • Olive oil1 tablespoon
  • Salt to taste
  • Rosemary to taste
  • Bacon to taste
  1. Open the loin in a blanket and season with salt and pepper. Let the seasoning set for 30 minutes.
  2. Meanwhile, in a pan, melt the butter and sauté the onion until lightly golden.
  3. Add the grated apple, minced garlic and sauté for about 10 minutes.
  4. Add sugar to caramelize. Add the orange juice and turn off the heat. Stir in the breadcrumbs, rosemary, salt and pepper. Mix well. Reserve.
  5. Stuff the loin with the stew and roll it up like a rocambole. Place the bacon slices and tie with string.
  6. Place the loin in a mold. Mash 3 unpeeled cloves of garlic, place them in the mold and drizzle with olive oil to make them perfume.
  7. Cover with aluminum foil and bake at 180° for 1 hour.
  8. Remove foil and bake on high until golden brown, about 30 minutes!
