Tenderloin Stuffed with Apple

- Chopped Onion1 unit(s)
- Garlic cloves3 unit(s)
- Butter3 tablespoon
- Brown Sugar2 tablespoon
- Orange Juice100 ml
- Breadcrumbs100 g
- Olive oil1 tablespoon
- Salt to taste
- Rosemary to taste
- Bacon to taste
- Open the loin in a blanket and season with salt and pepper. Let the seasoning set for 30 minutes.
- Meanwhile, in a pan, melt the butter and sauté the onion until lightly golden.
- Add the grated apple, minced garlic and sauté for about 10 minutes.
- Add sugar to caramelize. Add the orange juice and turn off the heat. Stir in the breadcrumbs, rosemary, salt and pepper. Mix well. Reserve.
- Stuff the loin with the stew and roll it up like a rocambole. Place the bacon slices and tie with string.
- Place the loin in a mold. Mash 3 unpeeled cloves of garlic, place them in the mold and drizzle with olive oil to make them perfume.
- Cover with aluminum foil and bake at 180° for 1 hour.
- Remove foil and bake on high until golden brown, about 30 minutes!
