Stuffed sausage and roasted vegetables

  • Tuscan sausage1/2 kg
  • Chopped Mozzarella200 g
  • Chopped tomato1 unit(s)
  • Chopped Pepper1 unit(s)
  • Chopped Onion1 unit(s)
  • Vegetables to taste
  1. Cut the sausage skin so it doesn't come apart too much. Ideal to cut only the top part and make room with your fingers
  2. Place the chopped onion, tomato and pepper inside each one.
  3. Join them so that one holds the other in a pan with oil at the bottom.
  4. Put the vegetables around.
  5. Ideally they are vegetables that are soft at the same time more or less. I used pumpkin and sweet potato.
  6. Bake in a preheated oven until the vegetables start to get soft.
  7. Remove from the oven and place the mozzarella cheese on top of the sausage.
  8. Return to the oven for the cheese to melt and brown.
