- Season the steaks on both sides with salt and pepper.
- Put the wheat flour, the egg and the breadcrumbs in different bowls and mix the egg yolk with the egg white
- Pass the steaks first in wheat flour, remove the excess, then in the egg and finally in the breadcrumbs.
- Line the bottom of a skillet with olive oil and fry the steaks on both sides. The point is your choice, I prefer it when the cone starts to brown
- follow-up preparation
- Peel the potatoes and carrots and cut into cubes
- Place to cook in boiling salted water until al dente.
- Cut the pod and broccoli. Cook the pod first for about 5 min, then add the broccoli and leave for another 1 min.
- With a drizzle of olive oil, fry the bacon and then add all the vegetables and sauté in the bacon fat. Serve it hot.
- Sauce
- Put the tomato and onion in the food processor
- In a pan put a drizzle of olive oil, the tomato and the processed onion, the chopped parsley and the chives
- On a low heat, add 1 tablespoon of water and the tomato paste and cook for 5 to 8 minutes. Stir from time to time so as not to burn the bottom.
- While still simmering, add the curd and cook over low heat for another 1 to 2 minutes until it reduces a little, stirring occasionally.
- Season with spices of your choice, I like paprika, powdered mustard and fine herbs
- Remove from heat and reserve
- Assembling the parmigiana
- In a refractory place 1 drizzle of olive oil, a little of the sauce, the fried steaks, cover with the rest of the sauce.
- Cover with slices of cheese and sprinkle with grated Parmesan cheese.
- Bake in a preheated 180 degree oven until the cheese melts.
- Serve it hot
