  • Grated Parmesan Cheese to taste
  1. Season the steaks on both sides with salt and pepper.
  2. Put the wheat flour, the egg and the breadcrumbs in different bowls and mix the egg yolk with the egg white
  3. Pass the steaks first in wheat flour, remove the excess, then in the egg and finally in the breadcrumbs.
  4. Line the bottom of a skillet with olive oil and fry the steaks on both sides. The point is your choice, I prefer it when the cone starts to brown

  2. Peel the potatoes and carrots and cut into cubes
  3. Place to cook in boiling salted water until al dente.
  4. Cut the pod and broccoli. Cook the pod first for about 5 min, then add the broccoli and leave for another 1 min.
  5. With a drizzle of olive oil, fry the bacon and then add all the vegetables and sauté in the bacon fat. Serve it hot.

  2. Put the tomato and onion in the food processor
  3. In a pan put a drizzle of olive oil, the tomato and the processed onion, the chopped parsley and the chives
  4. On a low heat, add 1 tablespoon of water and the tomato paste and cook for 5 to 8 minutes. Stir from time to time so as not to burn the bottom.
  5. While still simmering, add the curd and cook over low heat for another 1 to 2 minutes until it reduces a little, stirring occasionally.
  6. Season with spices of your choice, I like paprika, powdered mustard and fine herbs
  7. Remove from heat and reserve
  1. Assembling the parmigiana
  2. In a refractory place 1 drizzle of olive oil, a little of the sauce, the fried steaks, cover with the rest of the sauce.
  3. Cover with slices of cheese and sprinkle with grated Parmesan cheese.
  4. Bake in a preheated 180 degree oven until the cheese melts.
  5. Serve it hot
