- Soak the chickpeas for at least 12 hours (24h ideal) and peel them (optional, see tip)
- In a heated pressure cooker, brown the cubes of beef breast. When they are well sealed, add half the sliced garlic cloves and half the diced onion, brown a little. Cover with water, add a pinch of salt, freshly ground pepper, chopped thyme and rosemary and cook for 30 minutes after raising pressure.
- In a large skillet over medium heat, add extra virgin olive oil and the bacon cubes. Saute for 3 minutes then add the rest of the chopped garlic and let it sweat for a minute, add the chopped onion and let it sweat too. Also add the girl's finger pepper (can be fresh without seeds if you prefer a smoother result). Add the already cooked meat and its broth, the chicken cut into pieces, the chickpeas, the corn. Add the water to cover without exaggeration, add a pinch of salt and cook for another 45 minutes over medium heat.
- Now add the roots, complete again with water, taste the broth and, if necessary, correct the salt. Add the bell pepper cut into 2cm squares and cook for 15 minutes or until the potatoes are tender.
- Now add the tomatoes and wait 5 minutes until they wilt a little. Then add the prawns and olives. Wait 2 minutes and cover everything with the chopped chives. Serve hot. It's a complete dish, but if you want you can come with rice or even a roll.
