- Clean sirloin, skinless and fat free500 g
- Salt15 g
- Black pepper3 g
- Red onion80 g
- Onion25 g
- Gem60 g
- Olive oil100 ml
- Loaf of bread20 unit(s)
- Season the loin with salt and pepper and leave it in the fridge with this dry marinade for two days to firm up the meat and enhance the flavor.
- Remove from the fridge and place in the freezer until it starts to freeze. Remove and slice in the cold machine, slices of 0.5 cm each. Chop the meat into small cubes.
- In a container with water and ice, place a bowl (so that the mixture is very cold). Mix the minced meat, the yolk, the onion, the chives and the oil. Adjust salt and pepper. Reserve.
