- Season the loin and marinate for approximately 30 minutes. Cut the mushrooms into slices...
- Leave the pan very hot and place the loin to seal.
- In the same pan, add water until almost covering the loin and let it cook for about 1 hour.
- Remove the loin, reserve the cooking water. Cut it into slices and bake at 180° for 20 minutes.
- Strain the cooking water, and place over low heat until reduced by half. If necessary, thicken with a little starch.
- Remove the loin from the oven, drizzle with the reduction and finish with the sliced champignons.
