  • Garlic, onion, lemon and bay leaf.6 to taste
  1. Season the loin and marinate for approximately 30 minutes. Cut the mushrooms into slices...
  2. Leave the pan very hot and place the loin to seal.
  3. In the same pan, add water until almost covering the loin and let it cook for about 1 hour.
  4. Remove the loin, reserve the cooking water. Cut it into slices and bake at 180° for 20 minutes.
  5. Strain the cooking water, and place over low heat until reduced by half. If necessary, thicken with a little starch.
  6. Remove the loin from the oven, drizzle with the reduction and finish with the sliced champignons.
