Polenta with Meatballs in Homemade Tomato Sauce

  • Ground beef500 g
  • Breadcrumbs1/2 cup
  • Wheat flour1 tablespoon
  • Egg1 unit(s)
  • Salt (for meatball)1 dessert spoon
  • Clove Garlic (for meatball)2 unit(s)
  • Onion (for meatball)1/2 unit(s)
  • Cornmeal500 g
  • Water3/2 l
  • Extra virgin olive oil (for polenta)1 tablespoon
  • Salt (for polenta)1 tablespoon
  • Dehydrated Garlic1 teaspoon
  • Dried Onion1 teaspoon
  1. Tomato Sauce: 1. Place the tomatoes (cut and 4 parts) in a pan and heat for approximately 15 minutes to soften. Cover the pan and stir occasionally. Reserve. 3. Pass the tomatoes through a sieve to separate the seed and skin and remove all the pulp. I don't recommend using a blender. 4. In a large pan, heat the oil and sauté the chopped onion and pepper, the crushed garlic cloves and the basil. 5. When the onion starts to change color, add the oregano, cumin, chopped basil and salt, mix well and let it fry a little longer. 6.Add the processed tomato. 7.Cook over medium heat for an hour, stirring constantly.
  2. Meatballs: 1. Place the minced meat in a bowl, add all the ingredients and mix until smooth. Reserve. 2. Shape the meatballs into balls of the size you prefer and place them in the tomato sauce. No need to fry first. 3.After they are all in the sauce, cover the pan and let it cook for 30 minutes on low heat.
  3. Cooked Corn Meal: 1.Dissolve the cornmeal in 1/2 liter of water and set aside. 2.Take a pan to the fire with the rest of the water, mix the dehydrated garlic, the dehydrated onion, the oil, the salt and let it boil 3. Add the dissolved cornmeal slowly, stirring constantly. 4.Cook for 5 minutes on low heat or until it has a more consistent creamy consistency. 5.Serve next.
  4. Plating: 1. Place a portion of polenta in the center of the plate using a medium rim. Wait two minutes before removing the rim. 2. Place 3 or four meatballs on top of the polenta. 3. Drizzle with a little of the tomato sauce. 4. Put more sauce around the polenta. 5. Add grated cheese and garnish with a basil leaf or parsley. I used Castelões cheese, but Parmesan or Ilha cheese are great.

Intense purple color. On the nose, the red fruit, especially the cherry, appears pleasantly and full of delicacy, but with time the aroma intensifies a lot, without losing its refinement. On the palate it is also fruity and very, very fresh. Adequate acidity, silky tannins, good volume in the mouth and a long, pleasant and vibrant finish.
