Para o molho
Refogue o alho com azeite, depois acrescente a maçã. Em seguida o restante dos ingredientes.
Mexa sem parar em fogo baixo, durante 5 minutos, se desejar menos grosso acrescnte uma colher sopa de água.


for the sauce
Sauté the garlic with olive oil, then add the apple. Then the rest of the ingredients.
Stir constantly over low heat for 5 minutes, if you want less thick add a tablespoon of water.


Para a panceta: asse em uma churrasqueira com calor baixo, primeiro o lado da carne, depois o couro, aproximadamente 2h de cada lado. Em seguida desça para fogo forte o lado do couro para pururucar.
O tempero da pururuca é apenas sal e pimenta do reino que podem ser usados depois.

For the pancetta: roast on a low heat grill, first the meat side, then the leather, approximately 2 hours on each side. Then go down to high fire the leather side to pururuc.
The crackling seasoning is just salt and black pepper that can be used later.
