  • Ossobuco300 g
  • Carrot cut into medium cubes2/3 cup
  • Sliced Onion1/3 cup
  • Chopped Garlic1 dessert spoon
  • Can of chopped peeled tomatoes1 unit(s)
  • Dry red wine1/2 cup
  • Olive oil2 tablespoon
  • Fresh halved mushrooms1 cup
  • Sea Salt to taste
  • Ground black pepper to taste
  • Chopped fresh spices (rosemary, thyme, marjoram) to taste
  • Bay leaf1 unit(s)
  • Hot water1 cup
  • Chopped green onion2 tablespoon
  1. In a pressure cooker, heat the oil and sear the meat on all sides. Reserve.
  2. In the same pan add the onion and garlic and fry well.
  3. Add the wine and sauté. Return the meat to the pan and add the peeled tomatoes, carrots, salt, bay leaf, pepper, water and fresh seasonings.
  4. Close the pressure cooker and let cook for 30 minutes after you get pressure.
  5. Remove the pressure from the pan and check if the meat is tender.
  6. Turn on the fire, adjust the salt and add the mushrooms.
  7. Cook for 5 minutes, finish with the chives and serve with creamy polenta.
