Meatballs In Sauce

Passe no processador ou pique em pequenos pedaços metade da cebola, 1 alho e um punhado de salsinha. Coloque em uma tigela grande, junte a carne moída já em temperatura ambiente, acrescente 1 colher de chá rasa de sal, pimenta e páprica a gosto.
Agora o segredo é sovar bem, não precisa de nada para dar liga. Se possível peça ao açougueiro para moer a carne 2 vezes.
Depois da carne bem sovada é só modelar as bolinhas do tamanho que preferir. 
Aqui rendeu 18 almôndegas de 30 gramas. 

Process in a food processor or chop half the onion, 1 garlic and a handful of parsley into small pieces. Place in a large bowl, add the ground beef already at room temperature, add 1 level teaspoon of salt, pepper and paprika to taste.
Now the secret is to knead it well, you don't need anything to bind it. If possible ask the butcher to grind the meat twice.
After the meat is well beaten, just model the balls in the size you prefer.
Here yielded 18 meatballs of 30 grams.

Regue o fundo de uma frigideira funda com azeite e aqueça bem. Disponha as almôndegas com espaço entre elas para dourar sem juntar água, se necessário faça em duas remessas. Assim que dourar retire da panela e reserve.  

Water the bottom of a deep skillet with olive oil and warm up well. Arrange the meatballs with space between them to brown without adding water, if necessary do it in two shipments. Once golden, remove from the pan and set aside.

 Pique bem a outra metade da cebola, e o restante do alho.
Se necessário acrescente um pouco mais de azeite na panela e acrescente a cebola, assim que murchar acrescente o alho, deixe dourar  e adicione a passata, refogue bem, depois acrescente a água, acerte o sal, a pimenta e coloque a folha de louro. 
Assim que começar a ferver coloque as almôndegas no molho e deixe ferver em fogo baixo até que as almôndegas termine de cozinhar, por aproximadamente 10 minutos.
Aí é só servir como preferir.

 Finely chop the other half of the onion, and the rest of the garlic.
If necessary add a little more oil to the pan and add the onion, as soon as it wilts add the garlic, let it brown and add the passata, sauté well, then add the water, adjust the salt, pepper and place the bay leaf.
As soon as it starts to boil, put the meatballs in the sauce and let it boil over low heat until the meatballs are finished cooking, for approximately 10 minutes.
Then just serve as you prefer.
