  • Vinegar1/4 cup
  • Pink salt. to taste
  • Dry Chimichurri1 tablespoon
  1. Marinate the loin in vinegar for at least 30 minutes
  2. Season the meat in the fat with the salt, I used about 2 dessert spoons and the chimichurri
  3. Bake for about 2 hours on very low heat. Add 1/2 cup of water and bake for another 30 minutes.
  4. Baking time may vary. The secret is to lightly squeeze the meat. The fat should be crispy and the meat soft.
