Marinar o lombo no vinagre por pelo menos 30 minutos 

Marinate the loin in vinegar for at least 30 minutes

Temperar a carne na gordura com o sal, usei mais ou menos 2 colheres de sobremesa e o chimichurri 

Season the meat in the fat with the salt, I used about 2 dessert spoons and the chimichurri

Assar por cerca 2h em fogo bem baixo.
Acrescentar 1/2 xícara de água e assar por  mais 30 minutos 

Bake for about 2 hours on very low heat.
Add 1/2 cup of water and bake for another 30 minutes.

O tempo de assar pode variar. O segredo é apertar de leve a carne. A gordura deve estar crocante e a carne macia.

Baking time may vary. The secret is to lightly squeeze the meat. The fat should be crispy and the meat soft.
