- Pork loin1.5 kg
- Garlic Clove5 unit(s)
- White onion1 unit(s)
- Organic Shoyo Light1/2 cup
- Apple Cider Vinegar1/2 cup
- Red wine300 ml
- Salt and pepper to taste
- Tomato1 unit(s)
- In a frying pan, already hot and dry, sear the loin, cut into 3 pieces, on all sides until golden.
- Remove the meat and place the minced garlic and onion in the skillet. When golden, put the soy sauce, vinegar and red wine.
- Season with salt, pepper and cumin and add the chopped tomato. Return the loin and cook for 1h30 on low low heat.
- It is important that the loin is covered by 2/3. For this add water or your favorite broth (I used vegetables) when necessary.
- Remove the meat and cook the broth until reduced for another 30 minutes, always stirring so it doesn't stick.
- Cut the meat into slices, cover with the sauce and heat in the oven before serving.
- If possible, let the meat marinate in liquid seasonings for 1 hour before cooking. Let the meat dry well before putting it in the skillet.
- Served with green beans in butter and mashed potatoes with broccoli
