Ingredients: 1 kg lizard piece; 1 cup pineapple juice; to taste Salt and pepper; 300 g sliced bacon; 3 cup cooked and chopped broccoli; 1 cup Catupiry; 200 g boiled potato balls with skin; 1 unit(s) Red Bell Pepper; 100 g pre-cooked green beans; 1 unit(s) sliced carrots; 5 tablespoon olive oil; 1 teaspoon rosemary; 250 g thickly sliced provolone cheese

lizard piece1 kg
pineapple juice1 cup
Salt and pepper to taste
sliced bacon300 g
cooked and chopped broccoli3 cup
Catupiry1 cup
boiled potato balls with skin200 g
Red Bell Pepper1 unit(s)
pre-cooked green beans100 g
sliced carrots1 unit(s)
olive oil5 tablespoon
rosemary1 teaspoon
thickly sliced provolone cheese250 g

With a sharp knife, open the piece of meat in blanket.
Season with pineapple juice, salt and pepper. Let rest for 6 hours.
Remove from seasoning, pat dry with paper towels and spread out the bacon slices.
Mix the broccoli with the Catupiry, season with salt, pepper and spread over the bacon.
Roll up like rocambole and tie with culinary string.
Place in a mold, drizzle with the seasoning it was in, cover with aluminum foil and place in a medium, preheated oven for 1 hour.
Remove from the oven, discard the paper and let it cool slightly.
Remove the string and cut slices 1 finger thick, without reaching the end and separating from the piece.
Discard the seasoning from the mold and return to the meat.
Between the slices of meat, divide the sliced provolone cheese.
In a bowl, mix the potato, green beans, carrots, olive oil, rosemary, salt and pepper.
Spread around the meat in the tin and return to the oven for another 25 minutes or until the cheese is melted and golden.
Arrange the lizard with the vegetables on a platter and serve.
