- Beef liver (cut into steaks not too thick)1 kg
- Jilo to taste
- Onion1/2 unit(s)
- Garlic and salt to taste
- Pepper to taste
- Olive oil2 tablespoon
- Clean the liver steaks, removing the thin membrane that surrounds the meat. Also remove veins and small channels (if any)
- Season the steaks with garlic and salt and pepper.
- Heat a frying pan. Add the olive oil. Add the liver steaks
- Meanwhile, cut the eggplant and onion into slices.
- When the liver changes color, add the eggplant and onion
- Let it sauté until golden.
- When the eggplant is tender, the liver steaks are ready.
- Transfer to a plate and consume while still hot.
