- 6 potatoes, 250 grams of catupiry, 450 grams of forequarter, salt to taste, 100 grams of grated Parmesan cheese, a chopped onion and parsley and chives. to taste
- Cook the forequarter under pressure for 40 minutes with water until it covers the meat, then shred it and sauté it with onions and parsley and chives and reserve, the potatoes have to cook separately for about 20 minutes, then knead and add catupiry to it. keep dosing with salt until you like it, finally make a first layer of already mashed potato, then the dried meat already sautéed, finally cover with the rest of the mashed potato and throw the grated parmesan, oven at 240 degrees for 45 minutes.
