  • pork ribs1 kg
  • Salt and Black Pepper to taste
  • Olive oil4 tablespoon
  • Garlic (clove)5 unit(s)
  • chopped ginger4 tablespoon
  • Pepperoni Pepper1/2 dessert spoon
  • Star Anise5 unit(s)
  • Cinnamon sticks4 unit(s)
  • Honey2/3 cup
  • Shoyo2/3 cup
  • Apple Cider Vinegar6 tablespoon
  • Vegetable broth400 ml
  • Chives1/2 cup
  1. Season the ribs with salt and pepper to taste. Heat the oil in a skillet and sear the ribs until golden on both sides.
  2. Add the minced garlic, ginger, pepperoni, star anise, cinnamon, honey, soy sauce, vinegar and vegetable stock. Let it cook in the covered skillet for 3 minutes on medium heat.
  3. Flip the ribs and cook for another 10 minutes over medium heat. Cut the chives thinly on the diagonal and let it rest in cold water.
  4. Uncover the skillet and over high heat let the broth reduce until it turns a caramel and covers the whole ribs.
  5. Serve the ribs with a little chives on top. Serve with white rice, or mashed plantains or apples, or salad, or potatoes with paprika and salt.
