  • Whole beef rib with bone4.5 kg
  • Coarse salt and pepper to taste
  1. Season the top of the fat with salt and pepper. I add salt to cover the meat and let it dry. Something around 1 tablespoon per kilo.
  2. Light the fire and let it reduce until it embers. Place the meat with the fat side up and roast for about 2h30mim.
  3. Keep an eye on the coals so it doesn't die, add a little more coal every 30 minutes, hands or less.
  4. Turn the rib and bake for 1 hour. Pass half the sauce. Flip one last time and use the end of the sauce on the bottom.
  5. Cut and serve (recipe for the sauce on my page here too) you will need a good, sharp knife to cut the bone.
