- Black-eyed beans200 g
- Ground beef600 g
- Tomato Passata (or extract)150 ml
- Onion1 unit(s)
- Garlic Clove3 unit(s)
- Tomato1 unit(s)
- Coriander to taste
- Salt and black pepper to taste
- Paprika to taste
- Bay Leaf1 unit(s)
- Season the ground beef with salt, black pepper and paprika. Reserve.
- Place the black-eyed peas to cook under pressure for 15 minutes (after pressure is applied), with salt and a bay leaf.
- In a pan, sauté the onion and garlic in olive oil. When they wither, add the ground beef. Stir the meat a lot so that it doesn't pack, undoing the lumps and leaving it loose.
- When it starts to take on color, add the tomato. Let it cook until the tomatoes wilt. Then add the tomato passata, let it reach temperature again.
- Add water until it almost covers the meat and cook for 20 minutes.
- When the beans are ready, remove the pressure and strain the broth, discarding this broth. Let the beans lose temperature.
- When the ground beef is ready and the broth is more concentrated, add the beans and stir to incorporate. Check seasoning and adjust if necessary. Put cilantro and it's ready!
