  • Calabrian sausage250 g
  • Chopped Onion1 unit(s)
  • Chopped Garlic1 tablespoon
  • Chopped Green Bell Pepper1/2 unit(s)
  • Tomato extract2 tablespoon
  • Coriander and chopped chives to taste
  • Salt, paprika, pepper to taste
  • Lemon1 unit(s)
  • Bay leaves2 unit(s)
  1. I cleaned the tripe well, cut it into medium pieces, put it in a pan with water, squeezed lemon, added 1 bay leaf and boiled it for 10 minutes.
  2. After that time, I drained all the water, washed it again and set it aside.
  3. I sauteed the garlic with 2 tablespoons of oil, added all the spices and the tripe, sauteed it well, added water until it covered 1 bay leaf and cooked under pressure for 20 minutes.
  4. In a frying pan, I fried the pepperoni over low heat to release all the fat. I opened the pressure cooker, added the pepperoni pieces, adjusted the salt and cooked for another 10 minutes.
  5. I removed the pressure, added green smell and served with white rice.
