- Salt, paprika, pepper to taste

- I cleaned the tripe well, cut it into medium pieces, put it in a pan with water, squeezed lemon, added 1 bay leaf and boiled it for 10 minutes.
- After that time, I drained all the water, washed it again and set it aside.
- I sauteed the garlic with 2 tablespoons of oil, added all the spices and the tripe, sauteed it well, added water until it covered 1 bay leaf and cooked under pressure for 20 minutes.
- In a frying pan, I fried the pepperoni over low heat to release all the fat. I opened the pressure cooker, added the pepperoni pieces, adjusted the salt and cooked for another 10 minutes.
- I removed the pressure, added green smell and served with white rice.
