- Sear the oxtail in a high skillet, brown all sides
- In another pan, brown the garlic, onion, tomato and pepper.
- Add tomato sauce and cover with water
- Add the meat broth, adjust the salt and add the other seasonings.
- Cover and cook for 40 minutes or until tender.
