- Pepperoni Sausage100 g

- Carrot50 g
- Potato50 g
- Small onion1 unit(s)
- Tomato1 unit(s)
- Pepper60 g
- Olive oil20 ml
- Bay Leaf1 unit(s)
- White Wine50 ml
- Tomato Extract20 g
- Light background to taste
- Salt and Pepper to taste
- Bouquet Garni (leek, thyme, bay leaf and parsley)1 unit(s)
- Butter1 tablespoon
- Clean the meat and cut into small cubes and season with salt and pepper.
- Cut the sausage into small cubes, about the same size as the meat.
- Mince the garlic, onion, tomato, pepper, carrot and potato in brunnoise.
- Sear the meat in the oil with a little butter and let it dry.
- Add the sausage and let it brown.
- Add the garlic and onion and let it sauté.
- Add the tomato and pepper and sauté a little more.
- Add the vegetables and deglaze with wine.
- When it evaporates, add the bay leaf, extract, Bouquet, adjust salt and pepper and cover with a light base.
- Let the broth reduce enough.
