  • Garlic, Onion and Salt to taste
  • Chives and Parsley to taste
  1. In a pressure cooker, fry the ribs in oil until golden on all sides.
  2. Put the crushed garlic and fry a little, then fry the onion, sliced or chopped, as you prefer.
  3. Add plenty of water, salting to your liking.
  4. Cook the ribs until the bones detach from the meat, approximately 40 minutes after the ribs have risen.
  5. Remove the ribs, separating and discarding the bones.
  6. Transfer the broth to a large pot. Add the cooked and squeezed cassava, without that thread that is in the middle.
  7. Add the meat and cook over low heat for 15 minutes. If it gets too thick, add more water. The broth cannot be too thin or too thick.
  8. Sprinkle with chives and parsley when serving.
