- Cassava500 g
- Garlic, Onion and Salt to taste
- Chives and Parsley to taste
- In a pressure cooker, fry the ribs in oil until golden on all sides.
- Put the crushed garlic and fry a little, then fry the onion, sliced or chopped, as you prefer.
- Add plenty of water, salting to your liking.
- Cook the ribs until the bones detach from the meat, approximately 40 minutes after the ribs have risen.
- Remove the ribs, separating and discarding the bones.
- Transfer the broth to a large pot. Add the cooked and squeezed cassava, without that thread that is in the middle.
- Add the meat and cook over low heat for 15 minutes. If it gets too thick, add more water. The broth cannot be too thin or too thick.
- Sprinkle with chives and parsley when serving.
