  • Ground Coriander to taste
  1. Cut the meat into large cubes and desalt for 24 hours. Soak in cold water the day before: ribs + jerky + tail + jerky
  2. Change the water in the meats 3 times
  3. Leave the beans to soak. Wash the beans under running water and drain. In a container, cover the beans with water so that they are completely submerged. The water should be twice the height of the beans, as they swell during hydration. This process helps eliminate phytate (phytic acid) which is an antinutrient that hinders the absorption of calcium, iron, magnesium and zinc.
  4. Put the meats to cook along with the beans in the pressure cooker. Don't forget to put the blonde there huh!!!jo NOTE: If you don't have a very large pot, cook the meats in groups. Example: Paio + Dry Meat Breast + Ribs Loin + Tail ear + foot
  5. After everything is cooked… Time to sauté garlic and oil until yellow! Add the onion (which will release water and reduce the cooking of the garlic) and add the beans and meat to the stew. (If you want to serve buffet style, make each stir-fry in a pan).
  6. Season!!! Black pepper, coriander seed… Let it boil 🖤
