- Lentils: Green lentils170 g
- Water600 ml
- Bay leaf1 unit(s)

- Codeguim: cook the pork skin for 1 hour.
- After that, drain and reserve.
- Grind the meat and fat in the machine no. 12.
- Grind the cooked skin twice.
- Mix the meat, fat and skin and season with salt, white pepper and ground nutmeg.

- Add the codegum to the skillet and finish with the tomato concassé, parsley and chives.
