- chicken breast1 kg

- grated cheese3 tablespoon
- Tomato sauce1 tablespoon
- Step 1 Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
- step 2 Shred the chicken breasts to 1/2 inch thick or less.
- step 3 Place the beaten egg in a bowl. Mix the breadcrumbs, Parmesan cheese, Italian seasoning and garlic powder in another bowl. Dip each chicken breast into the egg, then roll in the breadcrumbs mixture to coat evenly. Place on prepared baking sheet.
- step 4 Bake in the preheated oven for 10 minutes. Flip and continue cooking until the chicken is no longer pink in the center and the juices run clear, about 10 minutes more. Let cool for 20 to 30 minutes.
- Step 5 Freeze in a 1-gallon sealable bag with smaller bags of tomato sauce and mozzarella cheese.
- Step 6 To serve: thaw in the fridge overnight. Reheat chicken to 375 degrees F (190 degrees C) until fully heated and crispy, 15 to 20 minutes. Cover the chicken with tomato sauce, sprinkle with mozzarella cheese and bake until the cheese is melted, another 3 minutes.
