  • Green Beans (I cooked them in the dried meat cooking water)2 cup
  • Olive oil3 tablespoon
  • Calabrian sausage cut into cubes1 unit(s)
  • Desalted, cooked and cut dried meat400 g
  • Chopped Onion1 unit(s)
  • Squeezed Garlic4 unit(s)
  • Rice (raw)1 cup
  • Bean cooking water2 cup
  • Coalho cheese (gold in the frying pan)300 g
  • Chopped Coriander2 tablespoon
  1. In a pressure cooker, place the beans, cover with water (+/- two fingers above) lead to medium heat
  2. Let it cook for about 25 minutes
  3. Drain the beans, reserving the cooking liquid.
  4. Put the oil in a pan and heat it, add the pepperoni and fry until golden
  5. Add the dried meat, onion, garlic and sauté
  6. Add the rice, the reserved bean cooking water
  7. Mix well and cook over medium heat.
  8. Add the cooked beans, mix well and remove from heat.
  9. Add the curd cheese and finish with finely chopped cilantro.
  10. Ready!!
