  1. Baião de dois is a recipe that takes time to prepare and has a few steps. Let's start by separating the ingredients of the first stage: rice, beans, meat, pumpkin, olive oil, bay leaf, onion and salt.
  2. cut the meat into 4 parts, place in the pressure cooker half full of water, cover and place over medium heat. When the pan starts beeping, you can lower the heat and cook for 20 minutes.
  3. In the meantime, we are preparing the rice. Take a pan to medium fire and when it warms up, water the bottom with olive oil. Add the chopped onion, season with a good pinch of salt and sauté until wilted. Pour in the rice and stir well.
  4. Then put 3 cups of water, put the bay leaf and let it cook until the rice absorbs all the water - to check just remove some grains from the bottom of the pan. If the rice is cooked, turn off the heat and leave the pan with the lid ajar to finish cooking with its own steam.
  5. Returning to the dried meat: spending the 20 minutes of cooking in the pressure cooker, turn off the heat, wait for the pressure to release and discard the meat cooking water. Add a cup of beans, top up halfway with water and season with a little salt. Cover the pan and take it to the fire again - this time only for 10 minutes, the ideal thing is that the beans do not cook too much so as not to break up.
  6. After 15 minutes of cooking, wait for the pressure from the pan to release and remove the pieces of meat. Shred to the size you want.
  7. Pass the beans through a sieve and set aside.
  8. Now let's go to the stew. First cut the bacon, sausage and coalho cheese into cubes in the size you prefer (the smaller, the more delicate the presentation on the plate). Take a large skillet to the fire and melt the butter. Then add the bacon and sausage and let it gold. Put the onion, garlic and finally the rennet cheese.
  9. Release the rice and add to the stew. Also mix the cooked beans and shredded meat. This is the time to adjust the salt if you feel it is necessary. Finish with cilantro to taste.
