- Bacon: Homemade Bacon200 g
- Pineapple Jelly25 g
- Pineapple Pickles50 g
- Pork broth50 g
- Black pepper to taste
- Pineapple Jelly: Peeled Pineapple1 kg
- Crystal sugar300 g
- Pineapple Pickles: Pineapple1 kg
- Water600 ml
- Apple Cider Vinegar300 ml
- Refined salt30 g
- Refined sugar40 g
- Broth: pork bone2 kg
- Pig's foot600 g
- White onion2 kg
- Water10 l
- Jam: cut the pineapple into small pieces, put it on low heat together with the sugar.
- Cook constantly stirring until the pineapple breaks up and the liquid reduces.
- Remove from heat and beat in a blender or mixer until smooth. Store in a tube or pastry bag.
- Pickles: Cut the pineapple into slices. Mix the other ingredients and add the pineapple.
- Keep in the fridge for at least a day to absorb the flavor, if you have a vacuum machine even better.
- Broth: roast the bones and onion in an oven at 200°C until golden.
- Put all the ingredients in a high pot and let it cook on low heat for 16 hours.
- Strain and reduce the broth until it creates a jelly-like consistency.
- Season with salt and pepper to taste.
- Bacon: Sear the bacon on all sides.
- Seal one side of the pineapple and then cut into medium cubes.
- Finishing: assemble the plate with the pineapple cubes on one side and the jelly drops on the other. In the middle, the bacon with the pork broth.
- Finish with a little black pepper.
