- Fresh egg whites200 g
- Icing sugar200 g
- Refined sugar200 g
- Mango600 g
- cream450 g
- Tahiti lemon200 g
- Sugar for whipping cream40 g
- Put the egg whites in the mixer and let it beat until it forms snow whites.
- Add the refined sugar little by little. Then add the icing also little by little for 10 to 15 minutes.
- Put it in the pastry bag and make it small, leaving the middle lower to put the stuffing.
- Bake in the oven for 1 hour and 20 minutes between 110° and 120°C.
- Remove from oven, let cool. Place the cream and 40g of sugar in a bowl, with the fouer, beat until firm, being careful not to beat too much and turn into butter.
- Add the cream in the middle, the mango on top and finish with the lemon zest.
