  • Fresh egg whites200 g
  • Icing sugar200 g
  • Refined sugar200 g
  • Mango600 g
  • cream450 g
  • Tahiti lemon200 g
  • Sugar for whipping cream40 g
  1. Put the egg whites in the mixer and let it beat until it forms snow whites.
  2. Add the refined sugar little by little. Then add the icing also little by little for 10 to 15 minutes.
  3. Put it in the pastry bag and make it small, leaving the middle lower to put the stuffing.
  4. Bake in the oven for 1 hour and 20 minutes between 110° and 120°C.
  5. Remove from oven, let cool. Place the cream and 40g of sugar in a bowl, with the fouer, beat until firm, being careful not to beat too much and turn into butter.
  6. Add the cream in the middle, the mango on top and finish with the lemon zest.
