- Olive oil to taste
- Chimichurri to taste
- Slice the zucchini into very thin slices. The trick is to use a mandolin.
- In a pan with boiling water, place the zucchinis and leave for 1 minute.
- Remove with the help of a slotted spoon and let it drain. Dry well with a paper towel.
- Cut the onion into very thin slices. Use a ramekin.
- In a bowl, mix the zucchini with the onion and season with oil, salt, vinegar, pepper, chimichurri.
- Place in the fridge to cool.
