- Cashew Nuts50 g

- Slice the zucchini with the help of a vegetable slicer or knife. In a frying pan, drizzle olive oil and arrange the zucchinis (little by little), sprinkle with salt to taste and let grill on both sides. On average 1min on each side. Reserve.
- Toast the chestnuts, let them cool and chop.
- Cut the cherry tomatoes in half and sauté them with oil and a pinch of salt.
- In a bowl or bowl, "break" the ricotta with the help of a fork, add the already chopped chestnuts, the sautéed tomato, drizzle olive oil and the chopped thyme. Fix the salt.
- On a board, open the zucchini blade, fill with the ricotta paste and roll up like a swiss roll. Repeat the process with all the zucchinis. Reserve in the fridge.
- For the herb oil: in the blender add the cilantro, chives and olive oil. Beat until you get a very thin sauce.
- On a plate, drizzle the zucchinis with the herb oil. Consuming it cold is very tasty. Enjoy your food!
