- margarine2 tablespoon
- wheat flour3 tablespoon
- milk1 cup
- grated parmesan cheese1/2 cup
- salt0 to taste
- Nutmeg0 to taste
- 1 Cut the chayotes using the chopstick blade of the Turbo Chef Mondial Food Processor. 2 Place in a bowl and microwave for 6 minutes. 3 Open, check if it's cooked, otherwise cook longer, set aside and let cool. 4 Put the butter in a pan, let it melt and add the flour. 5 Mix and add the milk and gradually dissolve, as if it were a béchamel sauce. 6 Set aside and let cool, when cool add the yolks and mix well until incorporated. 7 Then add the chayotes, cheese, salt and nutmeg and mix well. 8 In a stand mixer, beat the egg whites until stiff. 9 Then add it little by little to the chayote mixture, gently so as not to lose its lightness. 10 Transfer the mixture to a roasting pan or high platter, or, if you prefer, in individual pots, already greased and infarinhada. 11 Bake in a preheated oven at 180º until golden. 12 Remove and serve immediately.
