  • Sliced fresh Shitake3/4 cup
  • Grated Parmesan1 tablespoon
  • Sea Salt to taste
  • Ground black pepper to taste
  • Olive oil1 dessert spoon
  1. Heat the oil in a non-stick frying pan and sauté the shitake.
  2. Season with salt and pepper.
  3. Add the eggs and stir little by little until they are cooked.
  4. Adjust the salt and finish with the parmesan.
