- Fresh sliced Paris Mushroom1/2 cup
- Chopped seedless tomato1/3 cup
- Cooked Butter Beans1/2 cup
- Chopped green onion1 tablespoon
- Grated Parmesan Cheese1/4 cup
- Sea Salt to taste
- Ground black pepper to taste
- Olive oil1 dessert spoon
- Heat the oil in a non-stick frying pan and brown the beans well, add the mushrooms and sauté until wilted.
- Add the eggs, season with salt and pepper and gradually stir over low heat.
- Add the tomato and mix until the eggs are cooked. Finally add the chives and finish with the parmesan.
- Serve with toast, bread, etc.
