MODO DE FAZER
Corte os repolhos em fatias finas e em uma bacia grande adicione sal a gosto, esfregando bem com as folhas do repolho entre as palmas da mão, o sal deve machucar as folhas, quanto mais isso ocorrer mais macio fica no final. Se quiser mais crocante é só machucar menos as folhas com o sal.  
Coloque em um pote de vidro (que tenha tampa), coloque os grãos de mix de pimenta e um dente de alho descascado dentro de cada pote. Aperte bem os ingredientes dentro do pote de vidro.
Complete o pote com o vinagre e um fio de azeite trufado. 
O Ideal é deixar essa mistura fechada por pelo menos 10 dias.
E pronto. A quantidade irá depender do tamanho dos repolhos. 
Cuidado com o sal para não salgar demais.

WAY OF DOING
Cut the cabbages into thin slices and in a large bowl add salt to taste, rubbing well with the cabbage leaves between your palms, the salt should hurt the leaves, the more this occurs the softer it will be at the end. If you want more crunchy, just hurt the leaves less with the salt.
Place in a glass jar (which has a lid), place the pepper mix grains and a peeled garlic clove inside each jar. Squeeze the ingredients well into the glass jar.
Fill the pot with the vinegar and a drizzle of truffle oil.
The ideal is to leave this mixture closed for at least 10 days.
And ready. The amount will depend on the size of the cabbages.
Be careful with the salt so you don't get too salty.
