  1. Let's start with the tomato sauce, there are several ways to make the sauce, I believe it's up to each one how they want to make it. It can be roasted, boiled, whatever. I made a roast, put the Italian tomatoes cut into 4 in a refractory, along with 1 onion cut into half moons and 2 cloves of garlic, drizzled with olive oil and a pinch of salt. When you see that the tomato is "withered", you can remove it. Put it in a bowl with some basil leaves, it's to taste, and I really like it, or anywhere else you can beat it, in a blender or mixer. After beating the sauce, put it in a pan to heat and adjust the salt and pepper. Reserve. If you want to know other ways to make a tomato sauce, call me on insta. r.nagase (Renato Nagase) 😉
  2. Sauce done. Cut the peppers, eggplant, zucchini, khaki tomatoes and red onion into slices.
  3. In a skillet, or two, or three 😅. Grill with olive oil each slice of the products that were cut (peppers, zucchini, eggplant, tomato and red onion). The pans do not need to be very hot, otherwise they will burn and not grill.
  4. Once grilled, place your ratatouille in a ramekin, top first. The assembly is as follows: 1 put olive oil (grease) 2 a little of your tomato sauce 3 bell peppers 4 tomatoes 5 zucchini 6 eggplant 7 red onion 8 repeat each layer one more time 9 every two layers put a little bit of your tomato sauce.
  5. After that, place the ramekins in a light form in the oven for 15 minutes.
  6. Remove from the oven, turn your ramekin to unmold, and after that I put a little mozzarella on top I put 80gr in the ingredients but I don't know exactly if that would be it, it would be enough to cover your ratatouille, and it looks wonderful, I saw it in a restaurant I went to and I thought it was sensational, I did it and it was very good, do it! 😂. After melting the cheese, put some more tomato sauce on top. And that's it, just serve. It seems difficult, but it is not. I swear.. hahaha.. do it.
