  • Green, red and yellow peppers (one of each)1 unit(s)
  • Cherry tomato300 g
  • Diced Onion1 unit(s)
  • Olive oil100 ml
  • Garlic4 unit(s)
  • Salt to taste
  1. Cut the eggplant into cubes
  2. Cut the peppers into cubes
  3. In a pan, sauté the garlic with the onion in olive oil. Add the eggplant and peppers, sauté for 5 minutes, add the spices and stir gently
  4. Then pour all the eggplant on a platter and bake for another 25 minutes.
  5. The eggplant will be dry but juicy, a delicacy that accompanies any meal.
  6. Japanese eggplant has no seeds, is less acidic than other eggplants, has a sweet taste and soft texture. Extremely tasty!
