Olive oil100 ml

Cut the eggplant into cubes
Cut the peppers into cubes
In a pan, sauté the garlic with the onion in olive oil. Add the eggplant and peppers, sauté for 5 minutes, add the spices and stir gently
Then pour all the eggplant on a platter and bake for another 25 minutes.
The eggplant will be dry but juicy, a delicacy that accompanies any meal.
Japanese eggplant has no seeds, is less acidic than other eggplants, has a sweet taste and soft texture. Extremely tasty!
