  • Dijon mustard2 tablespoon
  • Tahiti lemon1 unit(s)
  • Salt1 teaspoon
  • Black pepper1 teaspoon
  • Olive oil20 ml
  • Canola oil200 ml
  • Garlic without the core1 unit(s)
  1. In a blender, beat the cold cream with the mustard, juice of one lemon, salt, garlic, pepper and olive oil for 20 seconds.
  2. Add some seasoning here if you want to flavor the mayonnaise like paprika, curry, cumin, among others. always in powder
  3. Put the blender on minimum power and add the oil in a stream.
  4. The mixture will start to change consistency.
  5. When it is firm to the point that the oil almost does not mix anymore, stop beating.
  6. Transfer your mayonnaise to a refractory and take it to the fridge, taste and retemper if necessary.
