  • Salt and Black Pepper to taste
  • Green Smell to taste
  • Oil2 tablespoon
  1. Heat the oil in a skillet, sauté the onion and then the garlic.
  2. When they become transparent, add the peeled and cut chayote into cubes of approximately 2 cm, season with salt and pepper to taste and sauté for 2 minutes.
  3. Add 1/4 cup of water, cover and cook over medium heat until the chayote is soft but still firm.
  4. In a separate bowl, beat the eggs with a little salt and pepper. Pour over the chayote and cover the pan again. Leave until the egg is cooked, about 2-3 minutes.
  5. Finish with green smell and serve!
