  • Ripe tomato4 unit(s)
  • Red Pepper1/3 unit(s)
  • Garlic Cloves3 unit(s)
  • Small onion1 unit(s)
  • Basil leaves2 tablespoon
  • Lemon grass to taste
  • Vegetable broth250 ml
  • Olive oil1 tablespoon
  1. 1. Roughly chop the tomatoes and peppers. 2. Remove the seeds and the white part, discarding. 3. Cut the onion and garlic into pieces and sauté in a deep pan. 4. Add the tomato and pepper and mix until incorporated with the sautéed. 5. Add the vegetable stock and basil leaves. 6. Roughly break the lemon grass, just to release the flavor and place in the pan. 7. Mix well, lower the heat and cook for 20 min (or until the liquid is reduced by 2/3). 8. Remove lemongrass and discard. 9. With a mixer, beat the soup until it is homogeneous and acquires creaminess. 10. Serve in a bowl. 11. Put a basil leaf to decorate and a drizzle of olive oil. Note: the soup can be eaten hot or cold.
