Potato Soup with Butter Beans

- Potatoes6 unit(s)
- Cooked Butter Beans1 cup
- Filtered water2 cup
- Whole or semi-skimmed milk1 cup
- Salt to taste
- Ground black pepper to taste
- Diced Minas cheese to taste
- Seasoned shredded chicken (optional) to taste
- French bread toast to accompany (optional) to taste
- Extra virgin olive oil to taste
- In a common pan, cook the butter beans with salt for about 50 minutes, drain and set aside
- Peel the potatoes and cut into squares, cook with water and a tablespoon of salt until very soft, drain and set aside
- Place the cooked potatoes, cooked butter beans, water, milk in a blender and blend well until smooth and creamy (add more water if necessary)
- Put the soup in a blender in a saucepan and add ground black pepper to taste, the seasoned shredded chicken, olive oil and taste, if necessary add more salt or pepper, stir until creamy and ready.
- Serve then with pieces of Minas cheese cut into cubes and French bread toast 😉 (optional)
