Pea soup with vegetables and bacon

- Dried peas1 cup
- Bacon cut into cubes2 tablespoon
- Chopped Onion2 tablespoon
- Minced garlic1 dessert spoon
- Bay leaf1 unit(s)
- Ground black pepper to taste
- Sea salt to taste
- Carrots, cut into cubes1/2 cup
- Chopped Parsley1 dessert spoon
- Chopped cauliflower florets1/2 cup
- Chopped chayote1/2 cup
- Sweet paprika1 teaspoon
- In a pressure cooker, fry the bacon until all the fat is released. Remove the bacon and set aside.
- In the fat left in the pan, sauté the onion and garlic.
- Add the peas, bay leaf, salt, pepper and sweet paprika and mix well.
- Add 1 liter of hot water and close the pressure cooker.
- Once the pot is under pressure, let it cook for 10 minutes or until the peas are well cooked.
- Blend the contents of the pan (without the bay leaf) in a blender until smooth.
- Return the soup to the pan, add the bacon, carrots and chayote.
- Let it cook until the vegetables are al dente, add the cauliflower and cook for another 2 minutes. Adjust the salt and finish with the parsley.
