- Dried peas500 g
- Onion1 unit(s)
- Garlic4 unit(s)
- Smoked Tofu200 g
- Water1.5 l
- Wash the peas until the water runs clear. Soak for 4 hours, changing water halfway through.
- Coarsely chop the onion and garlic (you don't need to be too careful because it goes in the blender later) and sauté with a little olive oil until golden. Add the peas, stir well, add the boiling water and season with salt and seasonings to taste (I used 1 generous teaspoon of coriander powder and a pinch of turmeric). Cover the pan and let it cook for half an hour.
- Transfer the entire contents to the blender and blend until creamy. Return to the pan and cook, with the pan closed, just until it boils. At this point add hot sauce, if desired, taste and adjust salt.
- For the tofu: chop into very small cubes, place in the airfryer with a generous drizzle of olive oil (stir well to incorporate) for 15 minutes, taking every 5 minutes to stir (if the airfryer is very powerful, 10 minutes is enough) .
- Serve the cream with the tofu on top.
