Butter80 g
Wheat Flour3 tablespoon
Vegetable broth1 l
White wine250 ml
White pepper to taste
refined salt to taste

Cut the onions into Julienne. Sauté the onion in butter until golden, add two tablespoons of water and cook with the pan covered for 15 minutes.
Add the flour and mix well, cook for 7 minutes so that it loses the taste of flour.
Add the wine and stir well with a fouet, add the vegetable broth, salt and pepper. Bring to a boil, cover and cook for 20 minutes.
